How to Make Crispy Niramish Aloo Patties
Step 1: Prepare the Special Roasted Masala
Heat a pan over low heat. Add the dried red chillies, cinnamon, green cardamoms, cumin seeds, and coriander seeds.
Roast the spices gently until fragrant. Do not over-roast them, as excessive heat can affect their flavour.
Transfer the spices to a plate and let them cool. Grind them into a fine powder and keep aside. This freshly roasted masala gives the potato filling its distinctive flavour.
Step 2: Make the Spicy Potato Filling
Heat two tablespoons of mustard oil in a kadai. Once the oil is hot, add the cumin seeds.
Add the grated ginger and finely chopped green chillies. Sprinkle in a little turmeric powder to help reduce spluttering while frying the ginger.
Cook the mixture until the ginger and chillies are fragrant.
Add the four boiled potatoes, breaking them into a coarse mash with your hands or a masher. Add the freshly roasted masala, chopped coriander leaves, salt, chaat masala, and black salt.
Mix everything thoroughly over low to medium heat. Continue stirring until the spices are evenly distributed and the filling is well combined.
Transfer the potato mixture to a plate and allow it to cool completely before filling the patties.
Step 3: Prepare the Dough
Place the all-purpose flour in a bowl. Add salt, a little sugar, and one tablespoon of white oil.
Rub the oil into the flour thoroughly. When you press a handful of the mixture, it should hold together in a loose lump. This step helps create a crisp pastry.
Lightly crush the ajwain between your palms and add it to the flour.
Gradually add warm water and knead until you obtain a soft, smooth dough. You may not need all the water. Cover the dough and let it rest for a while.
Step 4: Prepare the Cornflour Layering Mixture
Combine two tablespoons of cornflour with two tablespoons of white oil. Mix thoroughly to make a smooth paste. If the mixture is too thick, add a little more oil as required.
Keep some dry cornflour aside for dusting.
This mixture is important because it helps separate the thin dough layers during frying, creating the flaky texture of the patties.
Step 5: Roll and Layer the Dough
Knead the rested dough once more. Shape it into a long roll and divide it into five portions.
Shape each portion into a ball. Dust the work surface lightly with cornflour and roll four portions into very thin, roughly equal-sized sheets.
Place the first sheet on the work surface. Spread a thin layer of the cornflour-and-oil mixture over it and sprinkle a little dry cornflour on top.
Place the second sheet over the first and repeat the process. Continue stacking the sheets until you have four layers, spreading the mixture between them.
For the final layer, use a little additional oil and dry cornflour if needed.
Step 6: Fold and Cut the Layered Dough
Roll the layered dough gently to enlarge it. Fold the two opposite sides inward, then fold the remaining sides inward to create a compact square shape.
Dust lightly with cornflour and roll the folded dough into a larger square sheet. Keep the pressure gentle so the layers do not become compressed.
Trim the edges if necessary to make the shape more even. Cut the sheet into six pieces.
Step 7: Fill and Shape the Patties
Take one piece of layered dough and lightly apply water along its edges.
Place a portion of the cooled potato filling in the centre. Fold the dough over the filling to form a triangular or preferred pastry shape.
Press the edges gently to seal them. Use a fork to create a decorative pattern along the sealed edges.
Avoid pressing too hard over the layered pastry, as excessive pressure can flatten the layers. Repeat with the remaining pieces.
Step 8: Fry the Patties Slowly
Heat sufficient oil in a kadai over low to medium heat. The oil should be moderately warm rather than smoking hot.
Carefully place the prepared patties into the oil. Do not move them immediately after adding them, as the edges may open before the pastry sets.
After approximately 30 seconds, begin gently spooning hot oil over the tops of the patties. This helps the layers separate and puff up.
Maintain a low to medium flame throughout frying. Turn the patties carefully and fry until both sides become golden brown and crisp.
Remove the patties and drain the excess oil.
Step 9: Serve Hot
Your crispy Niramish Aloo Patties are ready! Enjoy them hot with tomato ketchup, your favourite chutney, or a freshly brewed cup of tea.
The flaky outer layers and spicy potato filling make them an excellent choice for an evening snack or a special homemade treat.
Tips for Crispy, Flaky Aloo Patties
- Roast the spices gently: Freshly roasted spices give the potato filling a deeper aroma.
- Cool the filling completely: Hot filling can soften the dough and make shaping difficult.
- Rub the oil into the flour: This helps develop a crisp, flaky pastry.
- Roll the sheets thinly: Thin layers are essential for a light, layered texture.
- Use the cornflour mixture between layers: It helps the pastry layers separate during frying.
- Seal the edges with water: This helps prevent the patties from opening in the oil.
- Fry over low to medium heat: Very hot oil can brown the outside too quickly without allowing the layers to become properly crisp.
- Do not disturb them immediately: Allow the pastry to set before moving the patties.
