How to Make Special Niramish Aloo Dum
Step 1: Prepare the Potatoes
Peel the medium-sized potatoes and cut them in half. If you prefer whole aloo dum, you can use small potatoes instead. Keep the cut potatoes in water to prevent discolouration.
Step 2: Fry the Potatoes
Heat approximately four tablespoons of oil in a pan. Drain the potatoes and add them to the hot oil. Fry over medium-high heat until they become nicely golden and partially cooked.
Add salt towards the end of frying. Remove the potatoes and keep them aside.
Step 3: Prepare the Ginger-Fennel Paste
Grind the ginger, green chillies, and fennel seeds with a little water to make a smooth paste. Fennel is the key ingredient that gives this vegetarian aloo dum its distinctive sweet aroma.
Step 4: Prepare the Powdered Spice Mixture
In a separate bowl, combine turmeric powder, Kashmiri red chilli powder, cumin powder, and coriander powder. Add a little water and mix well to make a smooth spice paste.
Using the spices mixed with water helps them cook evenly in the gravy.
Step 5: Prepare the Tempering
Use the remaining oil in the pan. Add cumin seeds, broken dried red chillies, and bay leaf. Add hing and approximately one teaspoon of sugar.
Allow the sugar to caramelise slightly, taking care not to burn it. This step helps develop a deeper colour in the gravy.
Step 6: Cook the Masala
Add the chopped tomato and the prepared ginger-fennel paste. Cover and cook briefly until the tomato softens.
Add the prepared turmeric, Kashmiri chilli, cumin, and coriander spice mixture. Cook over low to medium heat for around 3–4 minutes, stirring until the masala is well cooked.
Step 7: Add the Fried Potatoes
Add the fried potatoes to the cooked masala. Mix gently so that every piece is coated with the spices. Cover and cook briefly until the potatoes are around 70% cooked.
Step 8: Add Water and Simmer
Pour in approximately two small bowls of water, or enough to make the desired amount of gravy. Add salt and a little sugar to taste.
Mix gently, cover the pan, and cook for around five minutes, or until the potatoes become tender.
Step 9: Make the Special Roasted Masala
Dry-roast the whole cumin seeds, coriander seeds, cinnamon, clove, and green cardamom in a pan until fragrant. Add a little kasuri methi and roast briefly.
Allow the spices to cool, then grind them into a fine powder. This freshly roasted masala is the special ingredient that gives the aloo dum its unique aroma and flavour.
Step 10: Finish the Aloo Dum
Once the potatoes are soft and the gravy has reached your preferred consistency, add the freshly ground roasted masala. Finish with approximately one tablespoon of ghee.
Mix gently, turn off the heat, and cover the pan for a few minutes. This resting time allows the roasted spice aroma to blend into the potatoes and gravy.
Your delicious Special Niramish Aloo Dum is ready to serve!
